What You'll Need:

- 1 clove garlic, finely sliced
- 1 1/2 tablespoons Worcestershire sauce
- 1/4 cup vinegar
- 1 teaspoon paprika
- 1 teaspoon salt (or to taste)
- 1/2teaspoon nutmeg
- 2 tablespoons brown sugar

Make small incisions in meat and insert slices of garlic
- Combine Worcestershire sauce, vinegar, paprika, salt, nutmeg and brown sugar.
- Place meat in a roasting pan then rub mixture over meat.
- Cover and allow to stand for 30 minutes.
- Preheat oven to 150ºC.
- Cook slowly at 150ºC, allowing approximately 1 hour per kilogram for medium cooked meat.
- Baste frequently.
- Cover meat for all or part of cooking time (it helps keep the oven clean and the meat succulent).
- When cooked, move meat to a serving dish.
- Discard excess fat from pan.
- Pour into same roasting pan with enough liquid to make required amount of gravy.
- Thicken with a little plain flour mixed in 1/2 cup water or stock.
- Gravy should end up dark and tasty.
- Serve with greens and roasted vegetables.
