What You'll Need
- Victoria Hill Lamb cutlets - Order Your Lamb Box Here
- Flour, seasoned with salt & pepper
- Bread crumbs
- Olive oil (or any oil of your choice)
- Eggs
- Remove skin and excess fat from each cutlet
- Dip in seasoned flour, shake off excess
- Dip or brush cutlets with egg beaten with a little oil (to help hold crumbs firmly), then press firmly into breadcrumbs
- Repeat process if you like a crisp coating
- Refrigerate for 1 hour to firm crumbs
- Shallow-fry in hot oil, turning occasionally, until crumbs are golden brown and cutlets are cooked through
